Casserole Night

Tonight I made one of  Tim's favorite dish. It is Tater Tot Casserole. It's a really simple dish to make and most of the ingredients are probably found right in your pantry. Here's the recipe:

1 lb. of ground beef (I use lean ground beef)
2 cans of cream of mushroom soup (you could use 1 can of cream of mushroom and 1 can of cream of chicken but that's what I like)
8 oz. can of sliced mushrooms (you could skip this if you're not too fond of mushrooms)
1 small onion diced
12 oz. bag of tater tots
1 cup of grated sharp cheddar cheese

Saute the onion in about tablespoon of vegetable oil and then brown the ground beef until no longer pink. Then drain ground beef and put into a 8 X 11 casserole dish. Top the ground beef with tater tots, mushrooms, and pour the 2 cans of cream of mushroom soup over the tater tots. Cover with aluminum foil and bake in a 375 degree oven for 30 min. Then uncover and top with cheddar cheese and bake for 5 minutes until cheese melts.
